TAIE sword, one of the top ten famous swords in ancient China, was forged by two sword masters, Ou Yezi and Wu Guogan. According to the Lost History of Yue, the valuable sword Tai E was naturally made in the State of Chu. It later became the sword of Emperor Qin Shihuang, the first emperor of a unified China, and symbolized prestige. TAIE Japanese Kitchen Knife Series:
Sujihiki Knife (2, 8, 9, 10): Popularly referred to as the "slicer," this knife's long, narrow, graceful blade is particularly useful for trimming sinew and fat from meat, finely slicing boneless fish, filleting and skinning fish. It allows for a single drawing motion, from heel to tip.
Gyuto Knife (1, 3): The Japanese equivalent of a European chef knife, this all-purpose knife is great for filleting protein, cutting and chopping fruits and vegetables. The tip is commonly used for fine slicing fish and poultry, and julienning vegetables. The bottom half is suitable for rough chopping herbs and onions.
Bunka Knife (4): A general-purpose kitchen knife similar to Santoku, it is great for cutting vegetables with its wider blade. The triangle-shaped tip area is useful for cutting fish and meats. It has a 'reverse tanto' tip.
Nakiri Knife (5): Traditionally crafted with one bevel for precise cutting, chopping, and peeling of fruits and vegetables.
Santoku Knife (6): An all-round knife suitable for meat, fish, and vegetables. Its wider and rounded shape is ideal for vegetables, as well as cutting and slicing fish and meats.
Honesuki Knife (7): Specifically designed for de-boning and breaking down poultry, but also capable of filleting fish and red meat.
Materials:
Our knives are made from San Mai steel, a traditional Japanese blade-making technique incorporating three layers of steel. The center core is made of hard steel, while the two outer layers are softer and more pliable. The 9Cr18MoV steel composition ensures durability, with great edge retention and wear resistance. The blades have a hardness of 62 HRC.
Handle:
Our knives feature a Japanese octagon-type handle made of glass fiber (G10). G10 is a high-pressure fiberglass laminate known for its hardness, excellent waterproof properties, great abrasion resistance, and dishwasher safety. The handle's black and white colors are combined with a mortise and tenon structure for a minimalist look.
Daily Care and Sharpening:
To preserve the sharpness, it is recommended to use a wooden end grain board and avoid hard surfaces. Hand wash with a soft sponge and mild detergent, then dry thoroughly. Black spots or a grey patina may develop over time, serving as a protective coating against rust. For long-term storage, wipe the blade with camellia or olive oil, wrap in newspaper, and store in a cool, dry place.
To sharpen the knives, soak the whetstone for 10-15 minutes and lay a damp cloth underneath. Check the blade's condition and hold the knife at a 10-15 degree angle. Apply pressure and push the knife away from the base to the tip on the whetstone. Repeat the process on the other side. After sharpening, hand wash with water and dry immediately.
